Our butcher friends swear that the Delmonico is the best steak on the steer, and we’re not going to argue with them! The Delmonico, also known as the boneless ribeye, is cut from the rib primal, which is located along the upper part of the steer just behind the front shoulder. This steak has a distinct combination of marbled muscle and inter-muscular fat that make it incredibly juicy. Our 100% grass fed and finished beef has a rich flavor that shines through in this cut. 


Delmonico steaks are best cooked hot and fast. We recommend cooking them on the grill or doing a reverse sear. To reverse sear, begin by cooking the steaks in a 325° oven until they reach your desired internal temperature. Then sear the steaks in a hot pan on the stove top to get a nice crust. Make sure to season with salt and pepper before cooking and allow the steak time to rest before serving - you wouldn’t want to lose any of those precious juices. 

Each package of McElroy Farms Delmonico steak contains one steak and weighs roughly 10 oz. This is the perfect serving for one person or to share.
