Beef tongue is a truly phenomenal taco or sandwich filling.

The beef tongue is packaged whole with the skin on. The 100% grass fed muscle is rich and fatty with a great beef flavor. It does take a bit of effort to prepare, but the results are more than worth it.

Beef tongue should be cooked low and slow in liquid to tenderize the meat and make it easy to peel. It’s great when braised and then chopped up as lengua, a popular the taco filling. It is also delicious when poached and thin sliced for classic deli sandwiches on rye. 

Each McElroy Farms beef tongue weighs about a pound and three quarters which is enough for six servings.
