The oxtail is truly the tail of the steer, cut into small chunks. Each piece contains lean meat, fat, bone, and connective tissue, which, when cooked low and slow, add great flavor and texture to any soup, stew or braise. 

Oxtail needs to be cooked low and slow in liquid in order for the meat to become nice and tender and for all the nutrients to be released. It’s a classic in Caribbean soups and stews, but truly works well in any beef braise recipe. Though oxtail may seem intimidating, it is a very forgiving cut and we highly recommend giving it a try!
