Beef skirt steak is a thin, flat muscle that is located on the inside of the ribs. It is a very wide grain and a great ratio of fat to lean, but has a reputation for toughness if not cooked properly. The unique and delicious flavor of our 100% grass-fed and finished beef especially shines through in this cut. 

Skirt steaks benefit from a marinade or heavy seasoning followed by a hot and fast cook on a grill or in a pan. The steak will cook very quickly because of how thin it is, so be sure to keep a close eye on it. After cooking, make sure to cut across the grain to get as tender a bite as possible. We love to serve skirt steak slice in tacos or simply alongside veggies from other local farms. A Michigan-raised meal just tastes better!
