Skirt steaks benefit from a marinade or heavy seasoning followed by a hot and fast cook on a grill or in a pan. The steak will cook very quickly because of how thin it is, so be sure to keep a close eye on it. After cooking, make sure to cut across the grain to get as tender a bite as possible.
