The flank steak is cut from the flap section of the steer, which is the lower middle of the animal near the stomach. It’s a large, flat muscle with long, medium-thick fibers.
Flank steak is best cooked hot and fast over high heat on the grill or in a skillet. It benefits from any sort of marinade and should be sliced thinly across the grain after cooking. We use ours in fajitas or tacos, served simply with chimichurri, or sliced and cooked into a stir fry.
