It is very lean and has a medium grain, which makes it easy to cook and not too chewy. Our herd moves daily from pasture to pasture which gives the beef a distinct flavor. Because the sirloin is so lean, we recommend marinating this steak before cooking it hot and fast on the grill or in a pan. Marination helps begin to break the muscle fibers down and contributes to a more tender bite.
