Each shoulder steak is a half inch thick cross section of the pork butt, which is the upper section of the pork shoulder. The steaks are bone-in and consist of multiple lean muscles bound together with inter-muscular fat. These hogs are fed all-natural, non-GMO grains, and the result is a richly flavored pork that is full of nutrients.
Pork shoulder steaks are comparable to a pork chop, but are best when cooked a bit lower and slower. We recommend either cooking them in a pan over medium heat, on the grill over indirect heat, or reverse searing them. To reverse sear, begin by cooking the steaks in the oven until they reach your desired internal temperature. Then sear the steaks in a hot pan on the stove top to get a nice crust. Either way, this cut is great with your favorite sauce and some local vegetables. Each McElroy Farms pork steak weighs about a pound which is enough to feed one or two people.
