Shanks come from the front legs of the lamb. They have rich, lean meat and when slow-cooked for an extended time, provide fall-off-the-bone tenderness and deep flavor. Use in recipes similarly to a beef shank: i.e. stews, braises and soups. Can be prepared in a slowcooker or in a smoker as well.
