These chops are great on the grill. The nice fat cap on the loin side and tender tenderloin muscles provide the best of both worlds in one thick little chop. They are cut thick so you can get a nice char on the grill while not compromising on a medium-rare center. Some chops come with some extra meat on the tail as a bonus. These are a mix of rib and loin chops.
