Beef heart is actually one of the most nutrient-rich pieces of beef, and it's delicious.

The muscle that forms the beef heart is rich in zinc, iron, and vitamin B12, especially when it comes from a 100% grass fed cow like the ones that we raise. The heart comes whole and should be trimmed of any fat or gristle before being sliced into steaks or cubes for cooking. It can be intimidating, but everyone who has tried it loves our beef heart!

We recommend searing beef heart steaks hot and fast on the grill or in a pan and cooking them just to medium rare before serving with a light, fresh salad or sauce to balance the rich beefy flavor. Beef heart cubes can also be marinated and then cooked as kebabs. Finally, beef heart is a great addition to stews or chilis on cold winter nights. It’s a surprisingly versatile muscle! 

Each McElroy Farms beef heart weighs three and a half pounds which, when trimmed, is enough for six or so servings.
